Vodka Sauce Orecchiette with Burrata

This super easy pasta sauce is always a crowd pleaser. Rich and flavourful with a little bit of spice. The burrata on top adds a little extra decadence - totally optional, but a great add on.

Servings: 2

Ingredients

1 medium yellow onion

5 garlic cloves

1/4 cup parmesan cheese

3 tbsp olive oil

1 tube (3/4 cup) double-concentrated tomato paste

1 tsp crushed red pepper flakes

2 oz vodka

1 cup heavy cream

1 lb orecchiette (or other short pasta of choice)

1/2 cup pasta water

3 tbsp butter

Basil leaves (for serving)

1 burrata ball

Directions

  1. Boil pasta water and salt generously. Add pasta & reserve 1/2 cup pasta water.

  2. Sauté diced onion in olive oil until translucent, add minced garlic and cook until fragrant.

  3. Add tomato paste and cook until the colour deepens and it starts sticking to the pan.

  4. Add the vodka to deglaze the pan.

  5. Add heavy cream and simmer. If you prefer a smooth sauce, you can blend the sauce at this stage and return back to the pan.

  6. Once pasta is al dente add to the sauce along with 1/2 cup pasta water and parmesan.

  7. Stir in 3 tbsp of butter and mix until combined and glossy.

  8. Place in serving bowl and top with burrata ball and fresh basil.
